The Capensis Fijnbosch Chardonnay seeks to showcase the pinnacle of purity from a singular site within the Stellenbosch District, and is only produced by our winemaker, Graham Weerts, during exceptional vintages. While our flagship wine, Capensis Western Cape Chardonnay, is sourced from specific vineyard sites across the Western Cape, fruit for this wine is sourced exclusively from the estate Fijnbosch vineyard. Planted at nearly 600 meters, this vineyard is home to some of the highest planted vines in the Stellenbosch District.
Aged 11 months in 50% new French oak.
Special consideration is exercised in the selection of each vine that becomes a part of this blend to ensure depth, finesse, and quality of the highest level is apparent in the glass. The 2019 Fijnbosch Chardonnay opens with aromas of lemon posset and gunflint. Bright and full on the palate, this wine boasts peach and lime zest notes complemented by crushed oyster shell minerality and salinity. Due to its limited nature, only 125 cases of this wine were produced in 2019.
